Muffins are an essential part of life. Here, you can have that tasty muffin experience you love while also taking better care of yourself. Using whole grains, these muffins are not only delicious but also filling.

Blueberries are plentiful when they come in season. You can even enjoy them year round as you can pick them, bag them, and freeze them. Enjoy Blueberry Muffins year round! Or to eat seasonally, when strawberries or peaches are in season, you can put them in these homemade baking mixes too!

You Will Need:

-3/4 cup milk

-2 Tbsp oil

-1 Egg

-1 1/4 Cup Blueberries

-12 cup Muffin Pan


Preheat oven to 450F. In a large bowl, beat milk, oil, and egg. In smaller bowl, toss blueberries in the Blueberry baking mix. Gently fold the blueberry mixture into the large bowl of wet ingredients. Stir until combined. Do not over mix. Line muffin pan with paper liners, or coat with non-stick cooking spray. Divide the batter evenly among the muffin cups. Bake for 5 minutes at 450F, then reduce heat to 400F for 12-15 minutes, or until toothpick inserted into center of muffin comes out clean. Yields 1 dozen muffins or 3 dozen mini-muffins.
